WOYC Week: Taco Tuesday!

This week, we’re celebrating NAEYC’s Week of the Young Child. Join us as we explore a variety of topics with a focus on teaching, encouraging and investing in young children. We hope you enjoy reading this week and we’d love to hear your comments and experiences!

Kid-Sized Tacos

8 taco shells {1 shell per serving}
1 lb. ground turkey {2 oz. per serving}
1 c Mexican style shredded cheese {1 oz. per serving}
1 c cherry tomatoes, quartered {2 T per serving}
1 15 oz. can refried beans {1 oz. per serving}
2 T of your favorite taco seasoning
2 T water
Paper plates and bowls
Plastic spoons

Sliced black olives
Sliced avocado
Sour cream

In a medium skillet, sauté ground turkey over medium-high heat until no longer pink. Remove from heat and drain fat. Add taco seasoning to turkey along with water and stir to combine. As the meat cooks, heat the beans in a small saucepan, stirring occasionally. Place the cheese, tomatoes, and garnishes in separate bowls and assemble in a row with a spoon for each. Children can make their own taco by placing first the taco shell on their plate, then the meat and beans, then cheese and so on. They can add the ingredients they like!
